Wadi Stones
I have two stones that I found on separate occasions in a wadi in Iraq in 2004. That was the year that killing and mayhem in Iraq markedly increased with roadside IEDs and VBIEDs. It was a horrible but unremarkable escalation of violence against occupiers, tribes and sects.
On one, a large three-sided stone, I wrote, "Simplify" On the other, smaller stone, more akin to a stone you'd use to skip across a stream or lake surface, I wrote on one side, "Love Life." On the other side I wrote, "Dream."
They have been on my toilet tank cover since I returned. They are the first objects I see every morning when i wake and the last things I see every night before bed.
Ten years later, those words from a younger and wiser war-fighter me, written on wadi rocks with a black Sharpie, continue to inform my life. And for what it's worth, those wadie stones inform the lives of my employees; they just don't know it.

Memory of a Stand Up Guy
I had a friend, Adan Noguiera. We got into a big ass brawl with some assholes at Raw Power, a punk club on San Pedro at Woodlawn in the early/mid 80s. I slipped out the back door, fired up my '65 Galaxie 500 and pulled up to the alley door. Adam, still putting up a good fight, came out as I was honking my horn and hopped in. I sped off into the night. We had a late night meal at Taco Cabana, then went home and went to sleep.
Adan was the first gay male I ever knew. And his parents hated him for being gay. He was a stand up guy. The last I heard from him was six years ago on Facebook. He'd become a republican. True story.

How to Prepare Fatty Fish for Smoking
It is important to salt your choice of salmon or steelhead to retard bacterial growth.
use a 2-1 brown sugar to kosher salt ratio for thin fillets. thick fillets (1/2" or greater) can take a 1-1 sugar salt ratio. add to the dry brine whatever you like. i like to add dill, cayenne, garlic powder, smoked paprika, and chipotle powder. sift it until well blended.
use a couple layers of food service wrap in alternating directions.
layer your fillets with dry brine.
then wrap tightly, and then wrap in food service foil.
put in fridge, turning twice a day for two days. after 48 give or take, rinse the fillets, pat 'em dry and place on wire racks in front of a fan for two or three hours. this will develop the pellicle.
don't skip this step or you'll have mushy smoked fish.
this is what your fish should look like prior to smoking. dry, but moist and shiny.
smoke your fish with indirect heat with hickory, oak or pecan at less than 140 degrees. a couple hours should be plenty, depending on thickness.
and don't forget to have clean surfaces, clean hands and clean utinsils AT EVERY STEP in this process. although this isn't technically cold smoking, it's close enough. and the fish is at dangerous temps for long times. i've never had anyone complaining of gastro problems in the many steelhead/salmon smokes because i'm a clean freak when it comes to handling and preparing the fish. you should be a clean freak, too.

My info ("Gulf Air War Debrief", Aerospace Publishing) says it was: 19 Jan; 81st TFS, 52nd TFW; pilot Capt. Tim Burke. Punched-out on fifth landing attempt when one engine seized due fuel starvation (at odds with Luftig's story). It was later found that one of the bags had been punctured by an AK round, and the loss was classified as a 'hostile loss'.

He did mention that they made several attempts to land but with no luck due to the sandstorm. I don't recall his pilot's name or any mention of punctured bags by AK-47 rounds."
